Restaurant Manager - Delap Lui

Delap has accumulated various styles of restaurant operations experience in the hospitality industry such as W Hotel and Hotel ICON. He has received formal training in wines, sakes, cocktails and coffees. His work experience includes managing restaurants, pre-opening team in hotel restaurants, designing menu and wine lists, fine dining service, coordinating hotel catering business, and integrating food and beverage training programs.
Executive Chef - Simone Louise Nabbs

Trained from Australia Culinary School, Chef Simone went on to hone her skills in all aspect of culinary levels, including Pastry and Bakery, Haute Cuisine, Casual cafe dining, Mediterranean, Asian fusion, and contempory food styles by travelling in and around Australia, Europe, Eastern Europe, United Kingdom, Asia and America.
Chef Simone's fine culinary expertise was being praised and awarded numerous accolades:
- Awarded in several Salon Culinaire competitions
- 1st Western Australian girl team to win the 2nd overall in the National apprenticeship competition
- Overall 4th place for the Berlin Culinary Olympics
- Best Opening Accommodation Management Team Australia 2006
- Team trainer coaching various cooking apprentices in state, national and international competitions, with apprentices winning National apprentice of the year and achieving a position in Team Australia to compete in the Erfurt Culinary Olympics

Pinky Lau (Left), Cher Leung (Middle), Josie Pang (Right) designed the website as a student project in the Technology Management in Hotel and Tourism class. All three students have graduated from Higher Diploma Program in Hotel Management at SHTM.
